The Taste 1973 restaurant is characterised by its distinctive and creative cuisine, which is driven by passion and emotion and creates experiences and emotions with products from km0 and innovative techniques.

Gastrosinapsis
A space for research, development and innovation "R&D&I" has been created, with the multidisciplinary research team Gastrosinapsis, co-founded by Diego Schattenhofer, that fuses science and gastronomy to take local products to their maximum potential, giving the recognition they deserve to both their culture and origin. This work is reflected in the adjacent R&D&I laboratory, where all elements and variables of a menu are analyzed and fused to maximize their value.
The primary objective of this center is to promote research in the coming years to continue creating disruptive projects in gastronomy and hospitality, emphasizing the importance of the primary sector.




The Team
Having grown up in a family of hoteliers and restaurateurs, this profession is ingrained in his soul, influenced by the training of culinary icons such as Joan Coll, Mallmann, Berasategui and Paco Pérez.
Born into a family of hoteliers and restaurateurs, his love for gastronomy runs deep. His culinary journey has been shaped by legends such as Joan Coll, Francis Mallmann, Martín Berasategui, and Paco Pérez—influences that are reflected in his bold, creative cuisine.
This has led to recognition such as a Michelin star in the 2025 Michelin Guide Spain for the Taste 1973 restaurant, a Repsol Sun 2025 and the Award for Best Technological Innovation for his ‘Tapas Voladoras’ at Madrid Fusión together with the Astrochefs team.
Aníbal Morales and Alberto Somoza, first and second maître and sommeliers at the 5* Hotel Villa Cortés and Taste 1973 Restaurant, part of the Europe Hotels International chain, are professionals with more than 25 years of experience in the hotel and gastronomy sector.
They are responsible for ensuring that, under their leadership, the front-of-house team enables guests to fully connect with the extraordinary sensory experience offered by Taste 1973.

RESERVATION TERMS
You can cancel or modify your booking free of charge up to 24 hours before the date of your reservation. In case of cancellation outside this period, or no-show at the restaurant, a supplement of 50€ per person.
To fully enjoy your experience at our restaurant, we recommend dressing smart-casual and kindly request that you arrive at your reserved time.
Punctuality is kindly requested, as we can only hold your table for the first 15 minutes of delay. We appreciate your cooperation and look forward to providing you with an unforgettable evening.
